Wine & the long table
Wine tasting at the finca
4 wineries of the Binissalem DO (Denominació d’Origen, the island’s protected wine region) within ten minutes; sommelier-led tastings at the finca for 4 to 20 people.
The tasting
The wine is from the next village
The sommelier arrives at six with four bottles from vineyards a few minutes down the road, and tells you which hillside each came from, and why the Manto Negro tastes of this particular dust. The heat goes out of the day while you listen.
Stay for the pairing dinner, served outside at golden hour.
